Healthy Summer Breakfast

Ingredients (4 servings):

NOTE: Use whatever fruit is in season

  • ¾ cup toasted muesli
  • 200g mixed nuts & seeds with cranberries
  • 2 tablespoons honey
  • 4 slices watermelon
  • 1 cup strawberries
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup plain yoghurt
  • ½ melon, peeled, sliced
  • 2 mangoes, halved and peeled
  • 2 oranges, peeled, sliced
  • 2 kiwifruit, peeled, sliced

 

Method:

  1. Divide fruit among serving bowls. Top with a dollop of yoghurt and sprinkle over nut crumble.
  2. Preheat oven to 180C or 160C fan. Line a baking tray with baking paper.
  3. Place muesli, nuts, seeds and honey in a bowl and toss to combine.
  4. Spread onto prepared tray and bake for 10 mins until golden.
  5. Set aside to cool.
