Ingredients:
- 200g cherry tomatoes, halved
- 3 ripe large tomatoes, cut into wedges
- 1 red onion, thinly sliced
- ¼ cup small basil leaves
- 1 tablespoon olive oil
- 2 teaspoons red wine vinegar
Method:
- Layer tomatoes, onion and basil in four airtight containers.
- Drizzle with oil and vinegar and season with salt and pepper.
- Place in the fridge for at least 2 hours to develop the flavors.
