Mixed tomato and basil salad

Ingredients:

  • 200g cherry tomatoes, halved
  • 3 ripe large tomatoes, cut into wedges
  • 1 red onion, thinly sliced
  • ¼ cup small basil leaves
  • 1 tablespoon olive oil
  • 2 teaspoons red wine vinegar

 

Method:

  1. Layer tomatoes, onion and basil in four airtight containers.
  2. Drizzle with oil and vinegar and season with salt and pepper.
  3. Place in the fridge for at least 2 hours to develop the flavors.
