Cabbage, carrot and sesame salad

Ingredients (4 servings):

  • 1 tablespoon sesame seeds
  • 4 cups shredded savoy cabbage
  • 2 large carrots, peeled, grated
  • 1/3 cup low fat mayonaise

 

Method:

  1. Heat a small frying pan over medium heat. Add sesame seeds. Cook, stirring, for 2 to 3 minutes or until golden. Transfer to a plate.
  2. Place cabbage and carrot in a large bowl. Add dressing and two-thirds of the sesame seeds. Toss to combine.
  3. Top with remaining sesame seeds.
  4. Serve.
