Ingredients:
- 400g can cannellini beans, drained, rinsed
- ½ small red onion, finely chopped
- 200g grape tomatoes, halved
- 2 tablespoons red wine vinegar
- 1 tablespoon olive oil
Method:
- Combine beans, onion and tomato in a large bowl. Add vinegar and oil. Toss to combine.
- Cover with plastic wrap. Stand for 30 minutes for flavours to develop.
- Serve.
