Avocado and cucumber salad
Ingredients (serves 6): 175g baby salad leaves 2 medium avocados, chopped 4 green onions, thinly sliced 2 large English cucumbers, halved, thinly sliced ¼ cup lemon juice ¼ cup olive oil Method: Combine salad leaves, avocado, onion and cucumber in a bowl. Place lemon juice and oil in a screw-top jar. Season with salt.
